As you hopefully will of previously read, I am now on a WeightWatchers diet. So I have started trying out new recipes in order to keep it interesting but low in points. This warm salad, I’ve made three times now and I love it!
This is very straight forward, however you will need about 40 minutes of cooking time. So lets go…
Ingredients
- 35g Red Split Lentils
- 1 Carrot
- half a White Cabbage
- half a Red Pepper
- 1 Spring Onion
- Smoked Paprika
First you want to put the lentils on, they do take about 35minutes to soften, but just follow the instructions on the packet and you should be good. Then get to cutting up all the veg starting with the pepper and carrots- I did peppers into strips and carrots as cubes, but its your choice
You then need to add more to a frying pan, with ‘1Cal spray’ and a sprinkle of paprika. Cook these down until they start to get colour, then add a tiny amount of water- just enough to cover the base of the pan, then cover the pan with a lid. Let this start to soften, and then add the cabbage, and if you want more paprika – its really a matter of taste so add as much or as little as you want.
Once all of these are soft, and you lentils are cooked- I recommended tasting them to make sure- then mix the two together and add the spring onion, and voila. I’ve found it goes best with Tuna steak, but you could have it with pretty much anything, or even on its own if you wanted.
On WeightWatchers, it comes to just 3 points, which I think is great, and makes it a perfect accompaniment to a protein for dinner/lunch. If you give it a go, please send me pictures, or let me know if you have added different veg or flavourings!
